2 medium eggplants EVOO Sprinkles of salt, pepper, and thyme

Preheat oven to 450. Cut eggplants into 1 inch cubes. Line baking sheet with parchment paper. Toss eggplant in bowl with EVOO and spices. Put onto baking sheet in one layer and cook for 20 minutes. Take out, flip, and cook for another 10 min. Sprinkle thyme and serve.
